Studying food processing from an environmental engineering perspective

Water treatment uses various chemical and physical methods to purify water, making it safe to drink. Food processing also uses similar methods to make end-products, but sometimes these methods can create harmful substances. Unlike water treatment, we understand the makeup of food well, so we can better predict and study these harmful substances. The Simpson lab will apply environmental engineering techniques to investigate these harmful substances in food processing.
